    Watercress (Nasturtium officinale) is one of the most ancient cultivated greens on earth, and as a microgreen it delivers its signature sharp, peppery bite in a form far more tender and easy to grow than the full-size plant. The tiny round leaves emerge glossy and vibrantly emerald-green, with a clean, fresh aroma that hints at mustard and garden cress — snip a stem and you'll catch a lively, almost spicy fragrance instantly. As a microgreen it shines scattered over a soft-boiled egg or folded into a classic British egg sandwich, where its heat plays beautifully against creamy, rich elements. Watercress microgreens also offer enhanced antioxidant levels compared to mature watercress, making this an exceptionally rewarding crop to grow right now.

    GROWING INSTRUCTIONS
    1 Prepare your tray: Fill a tray with drainage holes with 3–4 cm of pre-moistened coconut coir or seed-starting mix — it should feel like a wrung-out sponge. Watercress loves consistent moisture, so getting the base hydration right sets you up for success from the very first day.
    2 Sow your seeds: No soaking needed — watercress seeds are mucilaginous and will draw moisture from the medium on their own. Scatter seeds evenly across the surface, aiming for good coverage without heavy piling. You'll notice them developing a tiny jelly-like gel coat almost immediately — that's perfectly normal and a sign things are working.
    3 Cover and germinate: Place a second tray on top as a blackout cover and keep in a warm spot (around 20–24°C is ideal). Check the tray daily and mist very lightly only if the surface looks dry — watercress seeds prefer less water than most microgreens at this stage, and overwatering is the main pitfall. After 3–4 days you'll see tiny white sprouts pushing upward.
    4 Blackout phase: Once germinated, keep the cover on for a total blackout period of 4–5 days. Lift the cover gently each day — you'll be rewarded by the sight of pale, stretching stems reaching for imaginary light. This etiolation phase builds strong stems and uniform height before the real magic begins.
    5 Expose to light: Remove the blackout cover and move your tray to a bright windowsill or under grow lights (12–16 hours per day). Within hours you'll watch the pale seedlings transform into vivid, glossy emerald green as chlorophyll floods the leaves — one of the most satisfying moments in microgreens growing.
    6 Water carefully: Switch to bottom watering by adding water to a second tray placed beneath your growing tray. Keep the medium moist but never waterlogged. Good airflow around your tray is important — watercress is prone to damping off if conditions are stagnant and wet.
    7 Harvest: At 7–12 days (or when seedlings reach about 5 cm), use clean scissors to cut just above the growing medium. Harvest when the greens are dry for the best shelf life — and taste one straight from the tray. That sharp, peppery hit is your reward for a job beautifully done.
