    Turnip microgreens are the quiet achiever of the brassica family — deceptively simple to grow yet rewarding in every way that counts. The cotyledons emerge a vivid grass-green on slender pale stems, and a single bite delivers a clean, sweet brassica note followed by the faintest peppery warmth, with a satisfying snap of crispness. They shine scattered over warm lentil soup or tucked into a smoked-fish wrap, where their mild intensity lifts the dish without overpowering it. With near-perfect germination, a 2–3 day blackout phase, and harvest in under two weeks, this is the crop to sow when you want consistent results and dinner-table impact fast.

    GROWING INSTRUCTIONS
    1 Fill your tray with 3–4 cm of pre-moistened, fine-textured potting soil or a quality germination mix — run your hand across the surface to level it without compacting. The medium should feel like a wrung-out sponge: moist but not dripping.
    2 Scatter 10 g of seed evenly across a 25×50 cm tray (about 0.8 g per 10×10 cm section), using a small strainer or shaker for an even spread. Seeds should sit close together but not overlapping — you'll be amazed how densely a 10 g portion covers the tray.
    3 Mist the seeds lightly so they make good contact with the soil, then stack a second tray on top and add a light weight (a full water bottle works perfectly). This gentle pressure anchors the roots and encourages even, upright germination — you'll feel the resistance when you lift the top tray after just 24 hours.
    4 Keep the stacked trays in a warm, dark spot at 18–22 °C for 2–3 days. Check once daily for moisture; the soil should stay evenly damp. By day 2 you'll see bright white shoots pressing against the cover — a satisfying sign that your seeds are off to a strong start.
    5 Once shoots are 1–2 cm tall and pushing the cover, remove the weight and top tray and move your microgreens into bright indirect light or under grow lights (16 h/day). Within hours the pale shoots will begin to green up dramatically — watch the cotyledons open and deepen in colour over the next day.
    6 Water from below by pouring a small amount into the solid bottom tray, targeting pH 6.0–6.5. This keeps the foliage dry, reduces mould risk, and lets the roots do what they love — drinking from underneath. Ensure good airflow in the growing area; turnip microgreens appreciate moving air once they are in the light.
    7 Harvest with sharp scissors at soil level on day 8–12, once the cotyledons are fully spread and bright green. Snip just before serving for maximum crispness, or store dry in a sealed container in the fridge for up to 3 days — the clean brassica scent when you open the container is genuinely appetising.
