    ABOUT

This sunflower has small seeds, about 22–28 to the gram, smaller than both our black oil and striped sunflower seeds. It is the same plant, Helianthus annuus, and gives the same kind of crop: sturdy, pale stems with thick, light green seed leaves, a little smaller than on large-seeded sunflower, and a nutty crunch.

Sunflower brings its seed leaves up into the light. The young stem pushes through the soil bent like a hook, then straightens and opens the two thick leaves that were folded inside the seed. Those seed leaves and the crisp stem below them are what you harvest. On the way up, each shoot also has to leave its hull behind.

That is where a weight on the cover helps. If you keep the tray pressed down for the first days, the roots grow into the soil instead of lifting the seeds. The stems come up straight and level, and the hulls loosen as the shoots push upwards.

    IN THE KITCHEN

Use the shoots wherever you want crunch: on avocado toast, in wraps and rice-paper rolls, or over soup and noodles just before serving. They hold up well under dressing, so they can be the main green in a salad. Keep them dry in a lidded box in the fridge and eat them within about a week.

    GROWING INSTRUCTIONS
1 Weigh 120 g of dry seed (100–130 g), rinse it and cover it with cool water for 4–8 hours. Drain it well. Don't soak it much longer, especially in a warm kitchen: the seeds can turn sour.
2 Prepare a clean 25 × 50 cm tray with a firm, level 3–4 cm layer of moist potting soil or coco coir. Spread the soaked seeds side by side in one layer, with none resting on top of others.
3 Put a second tray on top and weigh it down with a few kilograms, for example bottles of water. Leave it in a dark spot for 3–4 days, ideally at 18–22 °C, lifting the cover once a day to make sure the soil is still damp.
4 When the shoots start lifting the weight, uncover the tray and place it under a grow lamp or in a bright window. Water into the bottom tray and keep the air moving: it helps prevent mould. In the first days after uncovering, mist the tops lightly: the hulls get softer and are easier to knock off with a sweep of your hand. Some professional growers use a diluted hydrogen peroxide solution, for example to rinse seeds or mist the tray. We don't give dosages, because the wrong concentration can damage the seedlings: if you use it, follow the product label and do so at your own risk.
5 Harvest 8–10 days after sowing, once the seed leaves have opened but before the first true leaves show between them. Cut just above the soil with a sharp knife and remove any hulls that are still attached.
