    Speckled Pea is one of the most satisfying crops in the microgreens world: thick, jade-green stems push upward with impressive confidence, topped by soft compound leaves and the most charming little curling tendrils you will ever see on a tray. Bite into a stem and you get an immediate burst of sweet, fresh garden-pea juice — clean, bright and unmistakably spring-like, with a satisfying crunch that holds up in warm dishes too. Scatter a generous handful over a bowl of miso broth, fold into a spring risotto at the last moment, or simply pile onto sourdough with ricotta and lemon zest for an effortless starter. Speckled Pea is the variety that makes new growers fall in love with microgreens — and keeps experienced growers coming back tray after tray.

    GROWING INSTRUCTIONS
    1 Measure out 300g of dry speckled pea seeds and place them in a large bowl or jar. Cover generously with cool water and leave to soak for 8–12 hours — you will notice the seeds plump up noticeably as they drink; this pre-germination step is what gives pea shoots their legendary vigour.
    2 After soaking, drain the seeds thoroughly through a colander and give them a final rinse with fresh water. Shake off as much surface moisture as possible — peas are prone to rotting if waterlogged at this stage, so a good drain makes all the difference.
    3 Fill your tray with a quality potting soil or coco coir to about 2–3 cm depth and level the surface with the back of a spatula. Lightly firm it down — peas need good seed-to-soil contact to anchor their vigorous roots — then pre-moisten the surface before sowing.
    4 Spread the soaked seeds evenly across the soil in a single layer, side by side with minimal overlap. Give them a gentle press into the surface. Cover loosely with a second tray and stack with a light weight on top — the darkness and gentle pressure forces roots downward and triggers strong, uniform germination. Check once daily for moisture.
    5 After 3–4 days in blackout you will lift the lid to find pale, eager shoots already stretching upward — this is the moment to move your tray into light. Place under grow lights or near a bright window; within hours the stems will begin greening up and the first tendrils will start to curl, which is genuinely delightful to watch.
    6 Water from below once the trays are unstacked: pour water into the bottom reservoir tray and let the soil draw it up. Keep the soil evenly moist but never soggy — peas breathe, and good airflow around the stems prevents damping off. Maintain 18–22 °C and water at pH 6.0–6.5 for best results.
    7 Harvest at 10–14 days when shoots are 8–15 cm tall and the canopy is lush and full — use a sharp knife and cut just above soil level in one smooth motion. The smell as you cut is pure garden: fresh, sweet, green. Use immediately or store dry in a sealed container in the fridge where they will keep beautifully for several days.
