The flavour is a bold step beyond ordinary rocket: peppery, grassy and nutty, with a lingering warmth that comes from its high glucosinolate content, yet without the bitter edge of common cultivated arugula. As a microgreen, a small handful draped over a burrata, tucked into a steak sandwich, or pressed onto a sourdough pizza brings both visual drama and a flavour hit that chefs pay a premium for. GROWING INSTRUCTIONS 1 Fill your tray with 2–3 cm of pre-moistened potting mix or coco coir and smooth it level — a flat, even surface ensures every seed makes contact with the medium and germinates uniformly. 2 Scatter 10 g of seed per 25×50 cm tray in a single, even layer using a small sieve or spice shaker. Dragon's Tongue seeds are mucilaginous — they go slightly gel-coated when wet, so separate any clumps gently with your fingertip. Do NOT cover with soil; these seeds germinate best on the surface. 3 Mist the seeds lightly (twice, two minutes apart) to trigger that sticky gel coating, which anchors them in place. Place an inverted tray or blackout dome on top — within 24 hours you'll spot tiny white root tips pushing down; it's already happening! 4 Keep in blackout for 2–3 days at 18–22 °C, bottom-watering once if the medium feels dry. Around day 2–3, you'll notice the seedlings pushing against the dome — a satisfying sign they're ready for light. 5 Remove the dome and move the tray under grow lights or to a bright windowsill. Switch exclusively to bottom watering from here on to keep the delicate foliage dry and reduce mould risk — arugula's mucilaginous nature makes top-watering the number one enemy of a clean crop. 6 From day 4 onwards, watch the red veining intensify as the cotyledons expand under light. Ensure good airflow around the tray — a small fan nearby works wonders. The aroma at this stage is a fresh, green, peppery scent that fills the room. 7 Harvest at day 6–12 when cotyledons are fully open (for a delicate, spicier bite), or wait until day 12–14 for the first true leaves (deeper lobes, fuller flavour). Cut just above the soil line with sharp scissors, keep dry until serving, and enjoy within 5–9 days refrigerated.
