In the kitchen, a small handful transforms a simple pasta al pomodoro, a flatbread, or a soft cheese plate into something restaurant-worthy. Because rocket grows quickly, requires no soaking, and rewards even beginner growers with a dense, fragrant tray, there has never been a better moment to sow your first batch. GROWING INSTRUCTIONS 1 Fill your tray with pre-moistened coco coir or a fine potting mix to about 2–3 cm depth, level and gently firm the surface — a flat, even bed gives every seed an equal start and prevents patchy germination. 2 Weigh out 10 g of seed per 1020 tray (≈0.80 g per 10×10 cm section) and scatter it as evenly as possible across the surface. Rocket seeds are mucilaginous — they cling when wet, so sow them dry before misting for the most even spread. 3 Mist the seeds lightly, then cover the tray with a blackout dome or an inverted tray. Place it in a warm spot (18–22 °C). Within 24–48 hours you'll notice the seeds swelling and a faint, fresh green scent beginning to rise — germination is under way. 4 Keep the tray in blackout for 2–3 days, bottom-watering once if the medium starts to dry out. Lift the cover on day 2 and you should see pale, reaching shoots — a sure sign it is time to let them stretch toward the light. 5 Move the tray to your grow light or a bright windowsill. Rocket greens will green up and stand upright within a few hours of light exposure — it is genuinely exciting to watch. Continue bottom-watering once daily, keeping pH around 6.0–6.5 and the room between 18–22 °C. 6 Watch the cotyledons fully open and deepen to a rich, dark green over days 5–9. Taste a leaf around day 8 — if the pepper hits the back of your throat with a nutty finish, you are right on track. Harvest when leaves are fully open, ideally before the first true leaves appear (days 8–12 for peak flavour and tenderness). 7 Harvest by cutting just above the growing medium with clean scissors or a sharp knife. Avoid watering for 12 hours before harvest so the greens are dry, and package immediately. Stored dry in a sealed container in the fridge, your rocket microgreens will stay crisp and flavourful for 5–7 days.
