    ABOUT

Red Mustard (Brassica juncea) is one of the most visually striking microgreens you can grow: deep burgundy-red cotyledons emerge against vivid green, giving your tray the look of a tiny stained-glass garden. Bite into a stem and you get an immediate, clean mustard heat — sharp and aromatic, not harsh — followed by a pleasantly crisp texture that holds up beautifully in dressings and warm dishes alike. Scatter a small handful over an avocado toast, a soft-boiled egg, or a cold soba noodle salad and the colour contrast alone will stop people in their tracks. With seeds that sprout in days, no soaking required, and a harvest window that stretches up to two weeks, this is a variety that rewards impatient beginners and demanding professionals equally.

    GROWING INSTRUCTIONS
1 Fill your tray with 2–3 cm of pre-moistened potting soil or a quality growing pad and level the surface gently — an even base means even germination, and you'll already smell that faint earthy warmth as the soil settles.
2 Scatter your Red Mustard seeds evenly across the surface (aim for a single layer with minimal overlapping) and press them lightly into the soil for good contact. No soaking needed — these small seeds get to work immediately and soaking can make them clump together.
3 Mist the seeds lightly with a spray bottle, then cover the tray with a second tray and add a gentle weight on top. This 'blackout weighted' method gives uniform germination and strong stem development — check after 2 days and you'll find a dense carpet of pale sprouts already pushing upward.
4 After 2–3 days in the dark, remove the cover once the seedlings are reaching 2–3 cm tall. Move your tray into good light — a grow light works best for even, upright growth. Within hours you'll notice the stems beginning to blush from pale yellow to deep red-purple as the anthocyanins activate.
5 Begin bottom-watering: add a few centimetres of water to a solid tray, set your growing tray inside, let it absorb for 10 minutes, then remove. This keeps the surface dry (preventing mould) while the roots drink deeply. Water every 1–2 days as needed — the soil should feel like a damp sponge, never soggy. Maintain 18–22 °C with good airflow.
6 Watch the transformation unfold over days 5–9: the cotyledons deepen from green to rich burgundy-red at the edges, the tray fills with a gentle spicy-green aroma, and the stems stiffen into that satisfying crunch. The colour deepens the longer you grow them — patience pays off visually.
7 Harvest between days 8–12 by cutting just above the soil line with clean scissors or a sharp knife. Tilt the tray slightly, work in one clean sweep, and you'll be rewarded with a fragrant, jewel-coloured bunch. Make sure the stems are dry before storing in a sealed container in the fridge — they'll keep beautifully for 5–7 days.
