    Red Mustard Frilled is one of the most visually arresting microgreens you can grow, producing deeply fringed leaves in jewel-like shades of red-purple that deepen further the longer they stay under the light. Bite into a stem and you get an immediate aromatic mustard heat — sharp and clean, like Dijon with a floral edge — carried on leaves so fine and feathery they almost dissolve on the tongue. Scatter a handful over a poached egg, a beef tartare or a bowl of miso ramen and the dish is instantly transformed, adding colour, heat and texture all at once. With seeds that sprout in days and a harvest window under two weeks, there is every reason to start a tray right now.

    GROWING INSTRUCTIONS
    1 Prepare your tray: fill a shallow tray with 2–3 cm of pre-moistened potting mix or a quality coconut-coir blend and level it gently — an even surface means even germination and an even canopy at harvest.
    2 Sow dry — no soaking needed: scatter 10g of seed evenly across a full 25×50 cm tray (or 0.80g per 10×10 cm section). These seeds turn mucilaginous when wet, so keep them dry until they are on the soil. A small spice jar with a pierced lid makes a great shaker for even distribution.
    3 Press and cover for blackout: press the seeds firmly into the surface with a flat tray lid or similar to ensure good soil contact, then mist lightly and stack another tray on top with a small weight. This gentle pressure encourages strong, uniform root anchoring — by day 2 you will feel the tray getting warm from all the germination activity below.
    4 Blackout for 2–3 days: keep the stack in a warm spot (18–22 °C) and check daily for moisture. The seeds will arch upward, pushing the cover tray up — that delightful resistance is your signal that germination is going well. Bottom-water if the medium feels dry rather than misting from above.
    5 Move to light: after 2–3 days, remove the cover and place the tray under a grow light or in bright indirect daylight. Watch the seedlings transform — within hours the pale etiolated stems will flush to deep red-purple as the anthocyanins activate in the light. Maintain good airflow to keep the canopy dry and mold-free.
    6 Water gently from below: pour a small amount of water into a bottom tray and allow the growing medium to absorb it. Keep the pH between 6.0 and 6.5 and maintain temperatures of 18–22 °C. The frilled true leaves will begin to unfurl from day 6 onward and the colour will deepen day by day.
    7 Harvest at 8–12 days: when the first true frilled leaves are well-developed and the tray is a dense mat of red-purple lace, harvest with sharp scissors just above the soil line. Rinse gently, spin dry and use immediately — the aroma when you cut a full tray is one of the real rewards of growing these.
