    Red Cabbage microgreens are among the most visually striking you can grow: vivid violet-to-crimson stems crowned with deep green and purple cotyledon leaves that seem almost too beautiful to eat. Bite into a pinch and you get a satisfying juicy crunch followed by a gentle brassica warmth — mild enough for everyday use, interesting enough to make a dish stop traffic. Scatter a handful over avocado toast, tuck them into rice paper rolls, or pile them onto a grain bowl where their jewel-toned colour does the work of a dozen ingredients. Research shows red cabbage microgreens contain up to 40 times more Vitamin E than their mature counterpart — and right now is the perfect moment to start a tray and see that colour emerge for yourself.

    GROWING INSTRUCTIONS
    1 Prepare your tray: fill a 25×50 cm tray (or any shallow container with drainage) with 2–3 cm of good-quality potting soil or a coco coir pad. Smooth it level with your hand — no compacting needed. Already the earthy smell tells you something delicious is on its way.
    2 Sow the seeds: scatter approximately 10.5 g of red cabbage seeds evenly across the surface. No soaking required — these seeds are ready to go straight onto moist soil. Press them gently but firmly into the medium so each seed makes good contact. You'll notice the seeds are tiny and round, a warm burgundy-brown.
    3 Cover and start the blackout: place a second tray or humidity dome on top to exclude light, and optionally add a light weight to encourage strong root anchorage. Keep your tray somewhere warm (18–22 °C). Check once a day — if the soil surface feels dry, bottom-water by setting the tray in a shallow dish of water for a few minutes.
    4 Watch germination happen: within 2–3 days you'll lift the cover to find a carpet of pale, reaching sprouts — it's genuinely exciting every time. Replace the cover and give them one more day or two in blackout (3–4 days total) until most stems are standing upright and 2–3 cm tall.
    5 Introduce light: move your tray to a bright windowsill or under a grow light. Within 24 hours you'll witness the transformation — stems deepen to violet and purple, leaves shift from pale yellow-green to rich emerald and burgundy. Good airflow at this stage is important: a gentle fan or simply an open window helps prevent any dampness building up.
    6 Water with care: bottom-water every 1–2 days by pouring water into the lower tray and letting the soil absorb what it needs. Avoid spraying water directly onto the leaves once they've emerged. Aim for evenly moist, never waterlogged — tip the tray gently and no water should drip freely.
    7 Harvest at peak colour: at days 10–12 (cotyledon stage) your microgreens will be at their most vibrant and nutritious. Use clean scissors to cut just above the soil line, harvest only what you need, and store the rest (still in the tray) in the fridge. Rinse lightly before eating and enjoy immediately — the crunch is best when fresh.
