    Green lentil microgreens are one of the most satisfying legume grows you can plant: within days of soaking, the seeds crack open with visible vigour, and by harvest you have a dense mat of pale, thread-like stems crowned with bright, tender green leaflets. The flavour is clean and lightly nutty — closer to fresh peas than the earthy depth of a cooked lentil — with a delicate crunch that holds up beautifully under a drizzle of olive oil or folded into a warm flatbread. They bring a quiet, wholesome presence to a plate rather than a sharp punch, making them endlessly versatile as a garnish, salad base, or blended into a herb-forward green sauce. Germination is fast and reliable, the yield is generous, and the whole cycle from seed to scissors takes less than two weeks — there is simply no easier way to have truly fresh greens on your kitchen counter every week.

    GROWING INSTRUCTIONS
    1 Measure out your seeds and rinse them well under cool water, then soak in a bowl of clean water for 8–12 hours. You'll notice them plumping up and a faint fresh, leguminous scent filling the bowl — that's the germination process beginning. Drain thoroughly before sowing; standing water is the enemy of lentils.
    2 Spread a 2–3 cm layer of moist growing medium (soil or coco coir works beautifully) evenly across your tray. Pour your soaked seeds in a single, mostly non-overlapping layer across the surface and press down gently with your hand or a flat board — you want good seed-to-medium contact without compacting the soil.
    3 Stack a second tray on top as a weight and move the tray to a dark, warm spot (18–22 °C). Over the next 3–4 days the seeds will push up against the cover tray as they germinate — you can even hear a faint rustling if you listen closely. Keep the medium moist but not wet; a single gentle bottom-water at the start is often enough.
    4 After 3–4 days, remove the cover tray and move your lentils into light. You'll be greeted by a forest of pale, arching shoots straightening up toward the source of light almost in real time — one of the most visually rewarding moments in microgreens growing. From here, bottom-water every 1–2 days using pH 6.0–6.5 water.
    5 Keep temperatures steady between 18–22 °C and ensure good airflow around the tray to prevent any surface moisture from sitting on the shoots. Within a day or two in light, the cotyledons will deepen to a vivid, almost apple green — this is your signal that photosynthesis is in full swing.
    6 Harvest when the shoots are 5–8 cm tall and the first true leaflets are beginning to unfurl, typically around day 8–12. Cut just above the growing medium with clean scissors. The aroma at harvest is wonderfully fresh — a green, slightly grassy scent with a hint of pea. Rinse gently, spin dry if needed, and use immediately or refrigerate unwashed for up to 5 days.
    7 For the crispest flavour and best nutrition, harvest in the morning and let the cut greens rest in a colander for a few minutes before plating — the colour intensifies and the texture firms up slightly as any surface moisture evaporates.
