    Popcorn (Mais) microgreen shoots are arguably the most theatrical crop in the microgreen world: the same humble kernel you toss in the popcorn machine transforms, in complete darkness, into tall golden-yellow shoots with a flavour so intensely sweet it genuinely surprises first-time tasters — think fresh corn-on-the-cob crossed with light caramel. The pale lemon-yellow colour is not a variety trait but a direct result of blanching: keep the shoots in the dark throughout their entire growth cycle and they stay buttery-golden and candy-sweet; let light in and they turn green and bitter within hours. Snap one at the base and you get a satisfying crunch and a burst of clean, sugary juice — they garnish dessert plates, ramen bowls and sushi trays with equal elegance. Chefs at high-end restaurants have prized them since the 1990s, and now you can grow this restaurant-exclusive crop at home with nothing but a tray, soil and a cardboard box.

    GROWING INSTRUCTIONS
    1 Soak your popcorn kernels in cool water for 8–12 hours — they will visibly swell and soften as they absorb water, a sign the embryo is waking up. Drain very thoroughly afterwards; standing water is the enemy of corn shoots.
    2 Fill your tray with 3–4 cm of pre-moistened soil or coco coir and press it gently flat. Spread the soaked kernels in a single dense layer, side by side with minimal overlapping — you should barely see the medium beneath them. Press down lightly so every kernel is in firm contact with the soil.
    3 Cover the seeds with a thin layer (about 1 cm) of the same moist growing medium, then place a second tray or flat board on top as a weight. This is the secret moment: darkness plus gentle pressure drives the roots straight down. Now slide the whole setup into a completely dark spot — a cupboard, a closed box with a towel over it, or a dark room.
    4 Keep the medium evenly moist but never waterlogged — bottom-watering works best. After day 2–3 you'll hear (and feel) the kernels cracking open; by day 3–4 the weight-tray will start lifting as the shoots push upwards with surprising force. Check daily and add water to the bottom tray as needed.
    5 Here is the critical difference from all other microgreens: do NOT bring these shoots into the light, even after they've germinated. Corn shoots must stay in complete darkness for the entire growing cycle. The moment light hits them, photosynthesis kicks in, the natural sugars break down and the flavour shifts from sweet to bitter and fibrous. Keep them covered right up to the moment you harvest.
    6 Around day 7–10 your shoots will be 10–15 cm tall, thick, pale yellow and gloriously juicy. Harvest by cutting just above the soil surface with clean scissors. Work quickly and store immediately in a sealed container in the fridge away from light — even harvested shoots can still green up if left in daylight.
    7 Enjoy within 3–5 days of harvest for peak sweetness. Lay them over a warm bowl of ramen, tuck them into a fish taco, or simply pile them on a plate with flaked sea salt — their candy-corn sweetness needs almost no embellishment.
