    Broccoli Raab microgreens bring the soul of Italian cime di rapa to your kitchen counter — a deeply savoury, slightly bitter green with a complex edge that sets it apart from milder brassica sprouts. At harvest, the vivid lime-green cotyledons are silky-tender with a clean snap, releasing a fresh, vegetal aroma that hints at their wild Mediterranean origins. Scatter them over warm orecchiette with chilli and ricotta, fold them into scrambled eggs, or pile them onto bruschetta with aged pecorino — they hold their character without wilting into the background. Spring is traditionally Raab season, so there has never been a better moment to grow your own batch at home.

    GROWING INSTRUCTIONS
    1 Fill your tray with about 3–4 cm of pre-moistened coco coir or light potting mix, then firm it gently so the surface is level — an even bed means every seed gets the same start.
    2 Scatter 12–15 g of seeds evenly across the surface of a 25×50 cm tray (no soaking needed — these small brassica seeds spring to life dry). Press them lightly into the medium with a flat card or the base of a second tray so each seed has solid contact with the substrate.
    3 Mist the seeds lightly, then place an empty tray on top as a blackout lid and add a light weight (about 0.5–1 kg) to encourage even, strong germination. Keep the stack at 18–22 °C — within 24–48 hours you will feel the lid begin to lift as the seeds push upward.
    4 After 2–3 days in darkness, peek underneath: you should see a dense carpet of pale, arching sprouts reaching for light. Remove the lid, bottom-water the tray thoroughly (add water to the lower tray — let roots drink from below, not above), and move to your grow light or a bright windowsill.
    5 Water by bottom-watering once or twice daily, keeping the medium evenly moist but never waterlogged. You will notice the cotyledons unfurling and turning a vivid lime-green within hours of their first light exposure — genuinely satisfying to watch.
    6 Ensure good airflow around your trays: a small fan on low prevents the humidity build-up that brassicas dislike. Stop watering 10–12 hours before harvest to keep the foliage dry and extend shelf life.
    7 Harvest at days 7–12 when the cotyledons are fully open and bright green — or wait for the first true leaf if you want a more robust, slightly more bitter flavour. Cut just above the soil line with sharp scissors, rinse briefly in cold water, spin dry, and use immediately or refrigerate for up to 7 days.
