The flavour is fresh and mildly green, softer and less bitter than mature broccoli, with a satisfying crunch that holds up beautifully on warm dishes and cold salads alike. As a microgreen it excels as a garnish for soups and ramen, a layered filling in wraps, or simply piled generously on scrambled eggs. Purple Haze is also one of the easiest crops in the microgreen world — if you have never grown microgreens before, this is the variety to start with right now. GROWING INSTRUCTIONS 1 Fill your tray with 2–3 cm of pre-moistened potting mix or coco-coir, press it level and firm — an even surface is the secret to an even harvest. You will already be able to smell the fresh, earthy medium coming to life. 2 Scatter 25–30 g of Purple Haze seeds over the surface of a 25×50 cm tray in two or three light passes, rotating the tray between passes so every corner gets coverage. No soaking needed — broccoli seeds germinate quickly and cleanly without pre-treatment. 3 Mist the seeds gently so they make good contact with the soil, then cover the tray with a second tray or a blackout lid and place a light weight on top. Tuck them away in a warm spot (18–22 °C is ideal) and leave them in complete darkness for 2–3 days. This is the moment the magic begins — roots dive down while tiny white shoots push upward. 4 Check after 48 hours: when the shoots are around 1–2 cm tall and most seeds have sprouted, it is time to remove the cover. The seedlings will look pale or cream-coloured at first — do not worry, this is completely normal and they will turn green (and purple!) within hours of seeing light. 5 Move the tray under a grow light or a bright south-facing window and begin bottom-watering: pour water into the base tray and let the growing medium draw it up. Aim for 12–16 hours of light daily. Good airflow around the tray is your best defence against mould — a small fan nearby makes a real difference. 6 Watch as the purple colour deepens in the stems over the next few days — it is genuinely exciting. Continue bottom-watering once or twice daily as needed, keeping the medium moist but never waterlogged. Stop watering 12 hours before harvest so the leaves are dry. 7 Harvest at days 8–12 when the cotyledon leaves are fully open and the stems are a deep violet — cut just above the soil line with sharp scissors or a knife. Rinse gently in cold water, pat dry, and enjoy immediately or store in an airtight container in the fridge for up to 7 days.
