    Black Oil Sunflower is the undisputed favourite of the microgreens world — and one grow will show you exactly why. The cotyledons emerge a deep, glossy green atop pale, almost ivory stems, and the moment you bite in, you get a clean snap followed by a rich, buttery nuttiness that tastes remarkably like a fresh sunflower seed. Unlike delicate brassica microgreens, sunnies have real body — substantial enough to use as a salad base in place of lettuce, or piled thick onto open sandwiches and grain bowls. Harvest at cotyledon stage for peak sweetness and crunch, before any bitterness develops with the first true leaves.

    GROWING INSTRUCTIONS
    1 Measure out 130–150g of seeds and soak them in cool, clean water for 8–12 hours. You'll notice them plumping up visibly as they drink — drain well and give them a gentle rinse before seeding. Avoid over-soaking, as waterlogged seeds invite mould.
    2 Fill your tray with 2–3 cm of moist soil or coco coir, pressing the surface lightly to create a firm, even bed — sunflowers need good seed-to-medium contact to push their roots down confidently. Spread the soaked seeds in a single, side-by-side layer with minimal overlap, then mist generously.
    3 Cover the seeded tray with an empty tray (no holes) and place a weight of roughly 2–3 kg on top — a brick or heavy book works perfectly. This gentle pressure helps the radicles anchor into the medium and dramatically reduces the number of hulls that stay stuck to the leaves. The seeds will germinate while weighted.
    4 Keep covered and in the dark for 3–5 days, checking once daily for moisture. By day 2 or 3 you'll lift the cover and see a small jungle of pale, arching sprouts straining upward — this is your cue to stay the course just a little longer and let those stems stretch. Bottom-water if the medium looks dry.
    5 Once the sprouts are pushing the cover tray up and are mostly 3–4 cm tall, remove the weight and blackout cover and move the tray under your grow light or to a bright windowsill. Within 24 hours the cotyledons will open and turn a deep, vivid green — one of the most satisfying moments in microgreens growing.
    6 Water by bottom-flooding your outer tray once or twice daily — about 200–250 ml each time. Keep the pH of your water between 6.0 and 6.5 and maintain a room temperature of 18–22 °C. Any hulls still clinging to the leaves can be lightly misted with a spray bottle and then gently brushed off by hand.
    7 Harvest between days 8 and 10 when the cotyledons are fully open and deep green. Use sharp scissors or a knife, cutting just above the soil line. Taste-test daily from day 7 — the flavour peaks just before the first true leaves appear. Rinse lightly, spin dry if needed, and enjoy immediately for maximum crunch.
