The flavour is unmistakably beet: gently sweet, earthy, and grounding, with a satisfying crisp snap when you bite through the stem. Scatter a handful over a warm goat's cheese salad, tuck into a smoked salmon blini, or press into freshly buttered sourdough for an instant colour hit and a flavour that genuinely tastes of the garden. Beet seeds are clusters of 2–4 embryos in a corky hull, which is exactly what makes this variety so interesting to grow — once you understand their rhythm, the payoff in colour and flavour is extraordinary.

    GROWING INSTRUCTIONS
    1 Soak your Harley Queen seeds in warm water for 4–8 hours before planting — you'll notice the hard, corky seed clusters soften slightly. This step significantly improves germination speed and uniformity, so don't skip it. Drain and rinse well before sowing.
    2 Fill your tray with 3–4 cm of quality potting soil or coco fibre, firm it gently to create an even surface. Scatter approximately 23g of pre-soaked seeds per 25×50 cm tray (about 1.84g per 10×10 cm), spreading them as evenly as possible in a single layer. Press them lightly into the medium so every seed makes contact with the soil.
    3 Cover with a second tray or blackout dome and place a light weight on top — this gentle pressure encourages the seeds to root deeply rather than sitting loose on the surface. Keep in a warm spot at 18–22 °C. Peek after day 3 and you'll see the first tiny magenta-red stems beginning to push through like little curved hooks.
    4 Maintain the blackout for 5–6 days in total. The seedlings will be pale, twisted, and all bunched together — that is completely normal and part of the magic. When they are pushing firmly against the cover and most seeds have sprouted, they're ready for light.
    5 Move the tray into bright light (a south-facing window or LED grow light, minimum 12 hours per day) and watch the stems intensify to their full magenta-red within 24–48 hours. This colour transformation is genuinely exciting — beet stems are among the most dramatic of all microgreens under light. Begin bottom watering: fill a tray underneath with a small amount of pH 6.0–6.2 water and let the medium draw it up. This keeps stems dry and prevents damping off.
    6 Water by the bottom-watering method once daily, or every other day — check the weight of the tray to gauge moisture. Keep the room temperature slightly cooler after germination (aim for 16–20 °C) and ensure good airflow around the tray; this deepens the stem colour and firms up the texture beautifully.
    7 Harvest at 18–20 days when the cotyledons are fully open and stems are standing tall and vivid. Cut just above the soil line with clean scissors in one smooth motion.
