    Alfalfa microgreens are one of those rare crops that look as beautiful as they taste — a luminous tangle of pale-green stems topped with translucent, emerald cotyledons that practically glow under kitchen light. Bite in and you get a flavour that is clean, grassy and gently nutty, with none of the bitterness that puts people off stronger greens. They are impossibly light on the palate, which makes them ideal for layering into wraps, topping hummus plates or finishing a chilled gazpacho without overwhelming anything beneath them. With seeds that germinate in 2–3 days, a forgiving nature on almost any fine growing medium, and a harvest window that lands in under two weeks, there is no better variety to start your microgreens journey with — or to keep growing week after week once you're hooked.

    GROWING INSTRUCTIONS
    1 Measure your seeds and soak (optional but rewarding): weigh out 12 g of alfalfa seeds for a full 25×50 cm tray, or about 1 g for a 10×10 cm tray. If you have 4–6 hours to spare, soak them in cool water first — you'll notice they swell slightly and smell faintly grassy, a sign the seeds are waking up. Drain thoroughly before sowing.
    2 Prepare your growing medium: lay a pre-moistened coco coir sheet or hemp/jute mat flat in your tray. Alfalfa seeds are so fine they need a smooth, firm surface to land on — run your palm gently over the medium to press out any bumps. The surface should feel damp but not waterlogged when you press it.
    3 Sow evenly and press in: scatter the seeds across the surface as uniformly as you can — a shaker jar or pinch-and-release technique works beautifully for these tiny seeds. Once spread, press them lightly but firmly into the medium with a flat piece of cardboard or a second tray. Good contact now means even, confident germination.
    4 Start the blackout phase: cover the tray with an inverted tray or a blackout dome and place it somewhere stable at 18–22 °C. Keep the medium evenly moist with a gentle mist or bottom-watering once a day. After 2–3 days, peek underneath — you should see a carpet of tiny white shoots pushing upward with cheerful determination.
    5 Move to light: after 2–3 days of darkness, uncover the tray and place it under a grow light or near a bright, indirect window. Within hours you will watch the stems straighten and the cotyledons begin to unfurl and turn a vivid fresh green — one of the most satisfying moments in microgreens growing. Maintain pH 6.0–6.5 water and your 18–22 °C ambient temperature.
    6 Water carefully through to harvest: bottom-water or mist gently once or twice daily to keep the medium consistently moist but never soggy. Good airflow around the tray is your best defence against the mould that can occasionally bother dense small-seed crops — a small fan on low is plenty. Watch the stems lengthen and the tiny leaves fill out day by day.
    7 Harvest at peak: once the first true leaves are clearly visible — usually at 10–14 days — snip just above the medium surface with clean scissors. The cut greens smell fresh and faintly herbal. Rinse gently, spin or shake dry, and use immediately for the best flavour and texture; stored in a sealed container in the fridge they will stay bright and crisp for up to 5 days.
