ABOUT
China Rose is a traditional winter radish, grown for its long pink roots. As a microgreen it gives a tray of rose-pink stems under green, heart-shaped seed leaves, with the same clean heat you know from a fresh radish, only softer.
Radish is the quickest way to your first harvest: the seeds wake up within a day, the tray fills in fast and you can cut it a week after sowing. That makes China Rose a good choice for beginners and for growers who need a reliable, fast crop for mixes.
The peppery taste comes from the same natural sulphur compounds that make mustard and horseradish hot. It is strongest in young seed leaves, so cut on time if you like the bite, or a day or two later for a milder flavour.
IN THE KITCHEN
Use radish microgreens wherever you would use sliced radish: on tacos, avocado toast and eggs, in sandwiches, poke bowls and sushi, or on top of soups and noodles. The pink stems look best when the greens are piled up loosely. Keep them dry in a closed box in the fridge and use them within about a week.
