    ABOUT

Purple Haze is a broccoli of the same species as green Calabrese, grown as a microgreen for its colour. The stems turn deep violet to purple, the seed leaves stay bright green, and a full tray looks striking on the plate. The taste is mild and fresh, softer than mature broccoli, with a light earthy note.

The purple comes from anthocyanins, natural plant pigments that develop best in strong light. Seedlings look pale when you lift the cover, and the colour builds over the next few days under a grow light or in a bright window. In a dim spot the stems stay greener, so light matters more here than with green broccoli.

Otherwise Purple Haze is as easy as any broccoli: no soaking, quick and even germination, and a harvest 8–12 days after sowing. Sow 25 g per tray, within 20–30 g, for a dense tray cut at the seed-leaf stage. Mixed with green Calabrese, it gives a two-colour tray from a single sowing.

    IN THE KITCHEN

Use Purple Haze raw, for colour as much as taste: on scrambled eggs and avocado toast, in wraps and grain bowls, on top of ramen and soups, or mixed with green microgreens in a salad. Add it at the very end, because heat softens the stems within seconds. Keep the microgreens dry in a closed box in the fridge and use them within about a week.

    GROWING INSTRUCTIONS
1 Fill a 25 × 50 cm tray with 3–4 cm of moist potting soil or coco coir and press the surface level.
2 Scatter 25 g of dry seed (20–30 g) evenly, in two or three light passes. No soaking is needed. Mist the surface lightly.
3 Cover the tray with a second tray or a lid with a light weight on top and keep it in the dark at 18–22 °C for 2–3 days.
4 When the seedlings start to lift the cover, move the tray under a grow light or to a bright window. They look pale at first; strong light brings out the purple over the next few days. Water from below once or twice a day and give the tray some airflow to prevent mould.
5 Harvest 8–12 days after sowing, when the seed leaves are fully open and the stems have coloured. Stop watering about 12 hours before and cut just above the soil with sharp scissors or a knife.
