    ABOUT

Calabrese is the classic green broccoli, the same type sold as heads in shops. Grown as a microgreen and cut after 8–12 days, it gives short, crisp stems and broad, deep green seed leaves. The taste is clearly broccoli, but milder than radish or mustard microgreens, so even people who don't like strong greens tend to enjoy it.

It is one of the most forgiving microgreens to grow. The seeds need no soaking, sprout within a day or two and stand up evenly, which makes Calabrese a good first tray and a dependable base for mixes.

Why 25 g per tray? Seed suppliers give very different rates for broccoli, from about 10 g to 50 g on the same size of tray. Low rates suit growers who wait for the first true leaves; for a dense tray cut at the seed-leaf stage, 20–30 g works best. That is also what we found in our own test trays.

    IN THE KITCHEN

Add broccoli microgreens at the very end, because heat softens them within seconds. Try them on scrambled eggs or avocado toast, in sandwiches and wraps, on top of soup or ramen, in grain bowls, or blended into pesto with basil. Keep them dry in a closed box in the fridge and use them within about a week.

    GROWING INSTRUCTIONS
1 Fill a 25 × 50 cm tray with 3–4 cm of moist potting soil or coco coir and press the surface level.
2 Scatter 25 g of dry seed (20–30 g) as evenly as you can. Don't soak the seeds: wet broccoli seeds clump together and are hard to spread. Mist the surface lightly.
3 Cover the tray with a second tray or a lid with a light weight on top and keep it in the dark at 18–22 °C for 2–3 days.
4 When the seedlings start to lift the cover, move the tray under a grow light or to a bright window. Water from below once or twice a day so the surface stays dry, and give the tray some airflow to prevent mould.
5 Harvest 8–12 days after sowing, when the seed leaves are fully open and before the first true leaves appear. Stop watering about 12 hours before and cut just above the soil with sharp scissors or a knife.
