    ABOUT

Borage, also called starflower, is a Mediterranean herb best known for its blue, star-shaped flowers. Grown as a microgreen it gives pale green stems and broad, oval seed leaves covered in fine, soft hairs. The taste surprises most people: fresh cucumber with a hint of melon and a faint, clean bitterness.

Borage takes longer than most microgreens. The large seeds need a few days to wake up, the tray stays 4–6 days in the dark and you cut it 14–17 days after sowing. In return you get a flavour no other microgreen in the range has, and broad leaves that look good on a plate. Water from below and give the tray good airflow: damp, still air around large seeds invites mould.

Why 70 g per tray? Borage seeds are large, about 50 to the gram, so a dense tray needs much more seed by weight than small-seeded crops such as broccoli or radish. Sowing 60–70 g gives a full, even crop of broad leaves; much less leaves gaps between the seedlings.

    IN THE KITCHEN

Use borage microgreens raw, wherever cucumber would fit: in green salads, on chilled soups, stirred into yoghurt dips, with smoked fish and soft cheeses, in sandwiches and summer rolls, or as a garnish for lemonade and gin drinks. Add them just before serving. Keep them dry in a closed box in the fridge and use them within about a week.

    GROWING INSTRUCTIONS
1 Fill a 25 × 50 cm tray with 3–4 cm of moist potting soil or coco coir and press the surface level.
2 Scatter 70 g of dry seed (60–70 g) in a single, even layer. No soaking is needed. Press the seeds lightly into the surface and mist them.
3 Cover the tray with a second tray or a lid with a light weight on top and keep it in the dark at 18–22 °C for 4–6 days. Check once a day and water from below if the medium starts to dry out.
4 When the seedlings start to lift the cover, move the tray under a grow light or to a bright window, away from hot midday sun, which makes the broad leaves wilt. Water from below once or twice a day so the leaves stay dry, and give the tray some airflow to prevent mould.
5 Harvest 14–17 days after sowing, when the seed leaves are fully open and before the hairier true leaves appear. Stop watering about 12 hours before and cut just above the soil with sharp scissors or a knife.
