    ABOUT

Bull's Blood is an old beet variety grown more for its dark red leaves than for its roots. As a microgreen it gives deep crimson stems under seed leaves that range from green to dark burgundy. The taste is gently earthy and sweet, clearly beet, with a hint of spinach.

Beet is one of the slower microgreens. Each beet seed is really a corky cluster of several seeds, so one cluster can send up two or more seedlings, and they don't all come up on the same day. Press the seeds firmly into the medium for good contact and give them the full 4–6 days in the dark before you judge the tray.

Why 100 g per tray? Seed suppliers give anything from about 23 g to 100 g for the same size of tray. Low rates suit growers who wait for the first true leaves; for a dense tray of colourful stems cut at the seed-leaf stage, 80–110 g works best.

    IN THE KITCHEN

Use Bull's Blood microgreens raw, for colour as much as flavour: on goat's cheese and burrata, beetroot and lentil salads, grain bowls, savoury tarts and pale risottos, or with roasted root vegetables. Add them at the end, because heat makes them wilt. Keep them dry in a closed box in the fridge and use them within about a week.

    GROWING INSTRUCTIONS
1 If you soak, put 100 g of seed (80–110 g) in water for 6–8 hours, then drain and rinse. You can also sow the seeds dry.
2 Fill a 25 × 50 cm tray with 3–4 cm of moist potting soil or coco coir and press it level. Spread the seeds in a single layer and press them firmly into the surface; good contact helps the clusters germinate evenly.
3 Cover the tray with a second tray with a light weight on top and keep it in the dark at 18–22 °C for 4–6 days. Check daily and water from below if the medium starts to dry out.
4 When the seedlings lift the cover, move the tray under a grow light or to a bright window; strong light helps the leaves turn darker. Water from below, give the tray airflow to prevent mould, and mist any seed hulls that cling to the leaves so they slide off more easily.
5 Harvest 14–18 days after sowing, when the seed leaves are fully open. Stop watering about 12 hours before and cut just above the soil with sharp scissors.
